two reasons why my roommate is awesome

 She leaves me fruit snacks. 

(P.S. If you read the note, you might see the word vegan. This was when I considered doing a 15 day vegan trial after watching Vegucated (scarring). While I'm not officially vegan, I rarely eat meat and drastically cut my dairy intake.)

AND she brings me not one but TWO cupcakes upon returning from a work trip.

(One of these was for her.)

There are lots of other reason my roommate is awesome, and our friendship is not based on food (although that seems to be a frequent conversation topic). And she's coming back today after being gone all week for a work trip which is a good thing because I'm starting to go slightly crazy in this house by myself.

I scream for cupcakes

Not really, but I'm much more likely to scream for cupcakes than ice cream.

Moving on. 

One Sunday in August (I know. I've been meaning to publish this post for over a month), I got the kitchen bug. It all started when I invited Ben over for lunch after church. I had all of the ingredients for a recipe (that I had bought over a week ago), and inviting Ben helped motivate me to actually make the dish. I didn't get any pictures of that because we were hungry, and I wasn't going to say, "Stop! I gotta take a picture." Maybe next time.

After Ben left, I had images dancing through my head about cooking all of the time and having people over every weekend. Then I told myself to slow down. One meal, one day at a time. But since I was on a kick, I thought Hey! Why not make those cupcakes that I've been wanting to make for over a week now too?

Which led to these: Brownie cupcakes with cookie dough frosting.

 Halfway through putting the cupcake liners in the pan, I ran out of liners. So my roommate (I haven't told you about her! Someday, I will.) Anyway, my roommate mentioned that I could make liners out of parchment paper.

 This was the result. It actually worked pretty well!!

baking adventure: apple pie cupcakes

Baking is quickly becoming one of my favorite hobbies. Two weeks ago I baked dozens of chocolate chip cookies for a friend and my (first ever!) pound cake for small group. Unfortunately, I didn't document them, so there's no actual proof of my baking ventures. You'll just have to take my word for it. ;)

However, last weekend I made apple pie cupcakes with cinnamon butter cream frosting. And lucky for you, there are pictures to prove it. 

I followed this recipe.

Here are some photos of the process.

They turned out really good, but it was a very long process. I would only suggest making them if you're feeling ambitious, have lots of time on your hands, or are willing to stay up super late (like me!). The end product is worth it!

{cupcake again}

yesterday I went to cupcake with these two lovely people.  

then we went back to their place and watched the first part of the sound of music. 

it was a wonderful day.

nancy isn't big on sweets so she stuck with the tangy pink lemonade while macey and I went for the sweet goodness. her french toast and me turtle.

I love friends that love cupcakes or are at least willing to indulge in my cupcake obsession. they're the best.

the weekend alyssa came to town...

was a fantastic weekend. I'm so happy I got to finally see her!

I took very few pictures, but when I did it was when we went to cupcake. because of course I had to introduce her to it. I would have been a terrible friend if I hadn't.

two sundays ago macey and I went to the spoleto festival to see this group perform.

they. were. awesome. the performance blew my mind and I loved every second of it. 

and of course no trip downtown is complete without a visit to cupcake. so yummy.

it's my birthday today. nothing too special just 21(!). my day consisted of class and writing papers. lots and lots of papers. I will say that getting presents and cake does make life a lot better though. so does getting As on two research papers that you thought weren't so hot. now excuse me while I go finish my last(!) paper of the semester...

and cupcakes from cupcake make life better too. :)

I heart cupcakes.

I love cupcakes. a lot. and having two in the past week or so from this place has pretty much made the past week or so that much better. and just in case you're wondering, yes it is worth the forty minute drive.

I came back from work tonight and found this on my desk.
